Pepper tortilla with goat’s cheese

Ingredients

  • 1 red, 1 yellow and 1 green pepper
  • 2 tablespoons olive oil
  • 1 onion
  • 1 clove of garlic
  • 75 ml white wine
  • 4 eggs
  • 2 cooked potatoes from the day before
  • salt and pepper
  • 2 tablespoons dried Provencal herbs
  • 100 g goat’s cheese in cubes

This is an easy recipe for a simple main course. A tortilla with pepper and potatoes as basis. Preheat the oven to 180 °C.

Wash and halve the peppers and remove the seeds. Slice the peppers in strips. Peel the onion and the clove of garlic and chop them. Heat the olive oil in a casserole and briefly fry the onion and garlic. Add the pepper strips and stew them for 5 minutes. Pour the wine in the pan and let it boil down. Slice the potatoes in pieces. Beat the eggs and stir the eggs, potatoes through the mixture in the pan. Allow everything to set. Balance the flavours with salt, pepper and Provencal herbs. Add the goat’s cheese on top. Then, gratin the tortilla in the oven or under the grill.
